"Pleasure Bombs 2.0"

As you know I am a holistic nutritionist, which means I love food. However, in the spirit of honesty and transparency, I’ll share what I dislike about food… cooking! Spending countless hours in the kitchen prepping a meal just to devour it in less than ten minutes is the bane of my existence.

I am a lazy healthy cook, my meals are prepped in under 30 minutes. This extends into the baking realm too when the mood is right. I introduce to you my kitchen alter ego - Sky - The Lazy No-Bake Baker.

This week lets introduce a way to level up your snack game. Introducing this diverse, deliciously nutritious revamped "Pleasure Bombs" — a little taste of heaven.

These ‘Pleasure Bombs’ rock because they are good for you, comprised of healthy fats, fiber, and protein. This means this is a snack that will satiate, regulate blood sugar and mood, as well as help with the elimination of toxins.

This recipe yields 8-12 balls depending on the preferred size choice and is vegan and gluten-free.

In a food processor combine:

  • 1 cup of almond pulp (almond flour can be used as a substitute)

  • 1/2 cup of pitted dates.

    • if this isn’t sweet enough add in 1 tbsp honey (non-vegan), or maple syrup (vegan).

After the above two are combined add into the food processor:

  • 1 tbsp Cacao powder

  • 1 tsp Melted Coconut oil

  • 1 tbsp nut butter of choice (I love almond or sunflower seed butter).

  • 1/3 cup of oats.

  • *optional to add in 1 tsp of ground chia and/or ground flaxseed. If so may need more coconut oil to keep everything sticking together - adjust accordingly.

Once mixed, place into bowl create shape and desired size.

For toppings, it can be diverse!

  • Roll your pleasure bomb's in a plate of

    • oats,

    • or coconut flakes,

    • or cocoa powder

    • or matcha powder

    • or protein powder

    • or crushed nuts

    • or cacao nibs

Once finished place in the fridge for up to 7 days.
